Unlike black raisins, the golden raisins are not dried in the sun but in large dehydrators at controlled temperature and humidity levels.
Golden raisins are treated with antioxidant sulfur dioxide which is commonly used for both its health properties and as a preservative in dried fruits.
The result is a much fruitier, lighter flavour. The extra plumpness and juiciness of golden raisins comes from the temperature and humidity control.
